- In a bowl mash your bananas (I sometimes make this recipe in the food processor when I am in a hurry) and then add all your wet ingredients and then mix well. Add the fructose to the wet mix.
- In a separate bowl mix the remaining dry ingredients, except the chocolate chips, together and then start mixing your dry ingredients into the wet mix spoon by spoon making sure you make no clumps(this is where my food processor comes in, I don't have the patients to mix it so slowly by hand).
- Last but not least add the chocolate chips and mix well.
- Scoop some of your batter into a heated pan in the size that you would want your flapjacks to be. Let it cook in the pan until bubbles start forming on the upside of the flap jack and then start popping, this is when you know when to start flipping them over. let them cook on the other side until brown and "Voila" you have your flapjacks.
